Farewell Sugar Season

Boiling by the lantern light

The arch cools down after we flood the pans and get ready to head in for the night

Seeing as we now live about 80 miles from our sugarhouse and tiny sugaring operation, it was no surprise that our sugar season was a very short one this year.  Still, we have good memories of a few days (and nights) boiling with friends and replenishing our syrup stash for the next twelve months.  While we were out for a run yesterday, D shared with me some of the ideas that our friend Dave offered in his latest “Dispatch from the Sugarwoods.”  Maple has gone big and is getting bigger which brings mixed emotions for many.  As much love as there is for maple, what does the future hold?
